Beer Batter Fried Sage Leaves – Umbria-Style


Fresh sage leaves

3 oz beer

4 heaping tablespoons of flour

3 ounces of water

¼ teaspoon of salt

¼ teaspoon of black pepper

1 to 1½ pinches of olive oil


1) Mix 4 heaping tablespoons of flower,3 ounces of water,¼ teaspoon of salt,¼ teaspoon of black pepper and 3 ounces of beer.

2) In a medium size skillet heat olive oil for frying sage leaves.

3) Coat each leaf in batter and fry in the olive oil until light brown.

4) Drain excess oil from fried sage leaf and serve warm!
