Italian Roasted Vegetables
1 head of broccoli
1 head of cauliflower
3 tbsp. of olive oil
1 tsp. of salt
1 tsp. of black pepper
½ tsp. red pepper flakes or cayenne pepper
4 cloves garlic (diced)
3 tbsp. of Pecorino Romano or Parmesan cheese
1. Cut 1 head of broccoli and 1 head of cauliflower into equal bite size pieces. Place into mixing bowl. Drizzle 3 tbsp. of olive oil to lightly coat the broccoli and cauliflower.
2. Add 1 tsp. of salt, 1 tsp. of black pepper, ½ tsp. red pepper flakes or cayenne pepper, 4 cloves of diced garlic, and 3 tbsp. of Pecorino Romano or Parmesan. Mix well.
4. Evenly spread the broccoli and cauliflower on a cookie sheet and place in the oven at 400 degrees. Cook 40 minutes or to the desired level.
