Tony D’s Deluxe Italian Meat Sauce



… featuring my niece Elise who has mastered the recipe


Ingredients:

1 pound of hot Italian sausage

2 pounds of lean ground beef

2 small diced yellow onions

3 cloves diced of garlic

4 tablespoons of olive oil

1 large diced green pepper

¼ teaspoon of hot red pepper

3 -28 ounces cans of plum tomatoes

1 cup of red wine

1 bay leaf

1 teaspoon on black pepper to taste

½ teaspoon of salt to taste

1/3 cup of Italian seasoning (see Tony D’s Italian seasoning mix)

1 -6 ounce can of tomato paste

2 tablespoons of basil

1 tablespoons of oregano

6 tablespoons of grated parmesan cheese


Directions:

1) In a large skillet, brown the 1 pound of hot Italian sausage and 2 pounds of lean ground beef over medium heat. Drain fat and set aside.



2) In a large skillet, sauté in 2 tablespoons of olive oil 3 diced cloves of garlic, ¼ teaspoon of hot red pepper and 2 small diced yellow onions


3) In a large skillet, sauté in 2 tablespoons of olive oil 1 large diced green pepper.





4) In a large sauce pan, add three 28 ounces cans of plum tomatoes, the browned hot Italian sausage and ground beef, the sautéed onions, garlic, and red pepper mixture, and the sautéed green pepper. Begin to simmer.





5) Add I cup of red wine, 1 bay leaf, 1 teaspoon on black pepper to taste, ½ teaspoon of salt to taste, 1/3 cup of Italian seasoning, 6 ounces of tomato paste,2 tablespoons of basil and 1 tablespoon of oregano.


6) Simmer for 3 to 4 hours stirring occasionally.
